Turning the wheel is putting extra load on the power steering pump, dragging your idle speed down. Just like turning on all the lights and loading up the alternator

There's clearly an issue somewhere causing it to hunt under such a load, I'd be looking for possible vacuum leak, faulty idle stabilization valve. Possible MAF issue but doubtful if it runs ok above idle speed

When I bought mine it did something similar never missed a beat when driving but would sometimes hunt and stall when the revs dropped. Mine was stood for a while before I got it so I gave it a service a good run out and used a petrol treatment to clear out the lines and it ran fine after might be worth a try.
