What does ESP actually do?

As per the question above. I'm a little confused as to exactly what it does and what do you loose when switched off?

you mean aopart from really piss me off?

its basically traction control (its 4wd ffs!!!!!) and a very interfering stability system that uses the brakes on each wheel to stop you from spinning the car. what it does in reality is makes it understeer horrifically and sometimes unbalnces the car right in the middle of a bend NICE

in short its the button i press when i start the car lol

I've been switching it off by habit (my ST3 had something similar that torque limited) but wasn't sure what it did. In hindsight I think I screwed up at Santa Pod because I left it on. Would this have affected my run times?

if you launched it properly then probably yeah mate you can feel when it cuts the power because it cuts it dead

Yeah cuts the throttle, try with it on round a corner, then off and you can feel the difference in throttle response, a mate does it in his tt
